Nature’s Farms recently challenged me to get busy in the kitchen and create a dish with a South African twist using their products. Now, to be honest, I don’t cook often but I am always up for a challenge.

Nature’s Farms products

About Nature’s Farms:

Nature’s Farms is a range of pasta, biscuits and flour products that offer consumers and the hospitality industry a taste of simple, honest foods, created from the very best quality ingredients. Inside every box, bag and wrapper is great food, coupled with a greater food philosophy.

Nature's Farm Products

I was born in Durban so I loooove my Indian food! I knew I had to create a dish that was true to my culture but also something that brought back memories of growing up in Durban.

Simple delicious food that would make you want to lick your fingers!

One dish just wasn’t enough for me so I decided to create two dishes!

One that would be easy and quick to make and the other for those who wanted to test their skills in the kitchen especially when it comes to making flatbread! 😉

Dish One

Cheesy Potato Pasta

Ingredients used:

  • 2 packets of Nature’s Farms pasta.
  • Half an onion
  • 3 to 4 medium potatoes (cut in cubes)
  • Tablespoon of oil
  • Pinch of cumin seeds
  • Pinch of turmeric powder
  • 2 teaspoons masala
  • Half a teaspoon of ginger and garlic paste
  • A few curry leaves
  • Coriander for garnish
  • Grated cheese for layers.

Nature’s Farms Products

Method:

Step 1. Boil the pasta for 10 to 15 minutes (with salt and water).

2. Cook the curry – Add oil to a pot, once heated throw in your onions and let it fry.

3. Add cumin seeds and let it fry with the onions until golden brown.

4. Add turmeric powder, masala, curry leaves, ginger and garlic paste.

5. Add potatoes. Let it fry well then add salt and mix well.

6. Add water, stir and leave it to cook.

7. Check on a regular basis.

8. Curry is cooked when the potato is soft.

9. When the curry is done, you can start to layer your dish in a casserole.

10. Add pasta at the bottom, then the potato curry… continue until you reach the top of the dish.

11. Grate cheese over the top and put your dish in the oven for a few minutes so the cheese can melt over the top.

12. Enjoy 😛

Dish Two

Eggplant curry with flatbread

Ingredients used for curry:

  • Half an onion
  • Tablespoon of oil
  • Pinch of cumin seeds
  • Pinch of turmeric powder
  • 2 teaspoons masala
  • Half a teaspoon of ginger and garlic paste
  • 2 medium potatoes
  • 2 medium-sized eggplants
  • Coriander for garnish

Method:

Step 1. Cook the curry – Add oil to a pot, once heated throw in your onions and let it fry.

2. Add cumin seeds and let it fry with the onions until golden brown.

3. Add turmeric powder, masala, ginger and garlic paste.

4. Add eggplant, salt and mix well and let it fry.

5. When the eggplant is half-cooked, add your potato with a bit of water to cook further.

6. When done, garnish with coriander and enjoy with your flatbread!

Flatbread:

Ingredients used:

  • 3 cups of Nature’s Farms Flour
  • 1 1/2 spoons of margarine
  • 4 tbsp oil
  • Boiling water

Nature's Farms

Method:

Step 1. Add 3 cups of Nature’s Farms flour, 1 1/2 spoons of margarine, 4tbs of oil in a bowl.

2. Mix together then add boiling water as required to make a dough.

3. Pinch a small amount of dough and make small balls (keep aside).

4. Take one ball at a time, flatten with your hands and roll it with a rolling-pin on a board. Make sure your board is covered with a little flour so the dough doesn’t stick onto the board.

5. Put your rolled out dough onto a non-stick pan to toast with a little oil or butter.

6. Once toasted on both sides, you can enjoy with a delicious curry!

Let me know what you would use Nature’s Farms products for in the kitchen?
